Starting the day off right with a healthy dose of protein, fiber and complex carbohydrates will set your metabolism in motion!
Serves 2
Ingredients:
4 eggs, beaten or 1 cup egg substitute
1 tablespoons green chiles, diced
2 tablespoons shredded lowfat mozzarella cheese
2 tablespoons pinto beans, cooked, whole or lowfat refried
2 whole wheat tortillas (7- to 8- inch) warmed
1/4 cup salsa
Directions:
Prepare a medium skillet over medium heat and coat lightly with cooking spray. Add eggs and scramble, stirring frequently until eggs are almost set. Add green chilies and cheese and continue to stir until cheese is melted and eggs are set. To serve, spread or spoon half the pinto beans onto each tortilla. Top with half of egg mixture dividing equally between tortillas. Fold sides over and secure with toothpicks if desired. Serve with salsa.
