Whole Wheat Apple Walnut Scones
Serves 10
Ingredients:
1 cup all-purpose flour
1 cup whole wheat flour
2 tablespoons flax seed, ground
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1 dash nutmeg
1/4 cup butter, chilled
1 cup apple, shredded
1/4 cup walnuts, chopped
1/2 cup lowfat 1% milk
1 tablespoon vanilla extract
2 tablespoons lowfat 1% milk
1 1/2 teaspoons sugar plus ½ teaspoon ground cinnamon, combined to make cinnamon sugar **
Directions:
1. Preheat oven to 425 F.
2. Whisk together flours, flax seed, sugar, baking powder, cinnamon, baking soda, and nutmeg in a large bowl. Cut in butter and mash with a fork until mixture resembles coarse meal.*
Add apple, walnuts, 1/2 cup milk, and vanilla extract stirring until moist.
3. Turn dough out onto a lightly floured surface and knead lightly with floured hands. Divide dough in half and form into a small circle (about 6 inches wide). Cut circle into 5 or 6 wedges - cutting almost but not entirely through.
4. Brush top of wedges with 2 tablespoons milk and a small sprinkling of cinnamon-sugar. Bake at 425 F for 15 to 17 minutes or until golden. Serve warm.
**People who wish to limit their sugar intake can omit this topping altogether.
