Minted Cucumber Salad

(CBS) Here's a quick and easy summer salad that is wonderfully cooling on it's own or along side a spicy grilled dish. For more of a protein and spicy kick, use nonfat Greek-style yogurt and a dash of cayenne pepper.

Serves 4

2 cups cucumber, seeded and chopped
1/4 cup red onion, chopped
2 tablespoons rice vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup plain yogurt
3 tablespoons fresh mint, chopped


Combine all ingredients together and enjoy!
